#PotatoApeel: 3 waste-free Christmas potato recipes

Did you know that 93% of Brits admit to throwing away their potato peel? Considering we eat 120,000 tonnes of potato each Christmas, that's an awful lot of waste.

This Christmas, go waste free - as these recipes prove, it couldn't be easier.

Skin-on mashed potatoes

Leaving the skin on your potatoes will give the dish a delicious rustic texture. For best results, opt for a potato with a more tender skin, such as a Jersey Royal.

Ingredients

  • Approximately 250g of potato per person
  • A few pinches of salt
  • 1 cup of liquid per kg of potato - depending on your preference, this could be milk or vegetable stock, or a combination of both
  • A knob of butter per kg of potato
  • Optional: chopped chives and a splash of cream, or a spoonful of sour cream

Method

  1. Cut your unpeeled potatoes into evenly sized pieces of 1-2 inches. Put them in a saucepan of cold water, add salt, and bring to the boil. Boil until you can pierce the potatoes easily with a fork.
  2. Drain the potatoes, and let them steam dry.
  3. Add butter, your choice of liquid, chives and cream/sour cream if using. Mash the potatoes until they have reached your desired consistency. Season to taste.
Smashed roast potatoes

The skin plays a key role in this too-easy potato dish, transforming into a golden, crisp shell with cracked, crunchy edges.

Ingredients

  • 250g potato per person
  • A few pinches of salt
  • Olive oil
  • A small handful of rosemary sprigs
  • Salt and pepper to taste
Method

  • Preheat oven to 200C.
  • Cut your unpeeled potatoes into evenly sized pieces of 1-2 inches. Put them in a saucepan of cold water, add salt, and bring to the boil. Cook until you can pierce the potatoes easily with a fork.
  • Spread the potatoes onto a roasting tray, and gently press with the back of a fork until the peel cracks and the soft interior starts to burst through.
  • Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Distribute rosemary evenly around the tray.
  • Bake for 10-15 minutes, or until the potatoes have become golden and crispy.

Potato peel crisps

If your favourite traditional potato recipe makes reaching for the peeler non-negotiable, don’t despair. Simply transform the peels into the stars of snack time with these homemade potato crisps.

Ingredients

  • Potato peel
  • Olive oil
  • Salt and pepper to taste
  • Spices or herbs of your choice: for instance, try smoked paprika, chilli, dried oregano or thyme
Method

  1. Preheat oven to 200C.
  2. Peel your washed and dried potatoes, reserving the skins in an even layer atop a baking tray (it’s important they’re cooked as quickly as possible once peeled, so be sure the oven is free.)
  3. Drizzle with olive oil and sprinkle with salt, pepper and spices/herbs of your choice. Toss to coat.
  4. Bake for 8-10 minutes until browned and crispy.
